Cinco de Mayo Party

Let’s celebrate Cinco de Mayo with some amazing Mexican comfort food! This class will be fully hands-on with participants working in teams to prepare each course, and we’ll end with an unbelievably delicious full dinner. Chef Colomba will be teaching her childhood favorites: Homestyle Chicken and Potato Chimichangas, Red Salsa, Red Rice, Stewed Black Beans with Garlic Confit, Mushroom Queso Fundido with Guajillo Chile Mushrooms, and Ice Cream with Coconut Cajeta (coconut milk caramel sauce) for dessert.

Kentucky Derby

It’s almost Kentucky Derby Day, a tradition for over 150 years. Let Chef Jonathan show you some culinary delights before the Kentucky Derby kicks off at Churchill Downs this weekend. We will have Mint Juleps and a refreshing Cobb Salad, inspired by the derby. The Hot Brown sandwich will be the star - an open-faced sandwich originating from Louisville, Kentucky in 1926. Grab your knife and fork, this sandwich is over-the-top with roasted turkey, crispy bacon, fresh sliced tomatoes and smothered in rich, cheesy mornay sauce. Bring your best hat and smocked dress.

 
 

May 7th

A Night in Tuscany

Join Chef Lesa for a night featuring lovely Italian dishes. To begin the evening, there will be a Cannellini Bean Salad with fennel, sun dried tomato and goodies, with a bright dressing. The main course will be a Tuscan Ragu, with a sauce made of slow braised short ribs cooked in wine. This will be served with Handmade Pappardelle, which you’ll get your hands on and make during class. For dessert, a Limoncello Tiramisu.

May 8th

Sushi 101
with Chef Isaac

Wednesday, May 8th | Hands-On $80
5:30 - 7:30pm

This class will be a hands-on, 2-hour sushi experience that starts off with the tools and tricks of the trade. Chef Isaac will dive into the origins of sushi and we will roll our way to the modern day, touching on Sashimi, Nigiri, Traditional rolls (Hosomaki) and Specialty rolls (Uramaki). This is a lab style class, which means two people per station with everyone rolling and eating their own sushi.

 

May 9th

An Evening in Korea
With Chef Lesa

Join Chef Lesa for a night of big flavors and spices! The first dish will be Spicy Chicken Bao. This is a medium-to-mild heat dish made with crispy chicken tenders and tossed in a gochujang sauce, served in a steamed Bao bun with pickled vegetables. The next dish will be Japchae…a sweet potato glass noodle stir fry, with pork and vegetables in a lovely sauce. We’ll have Mango Sago for dessert, a tapioca-style pudding with coconut, mango and other confections.

Mother’s Day Tea

Our favorite French Woman in Idaho is celebrating Mother’s Day with a special Mother-Daughter Tea. Of course we welcome sons and grandsons, as well. Join us in your best attire - dresses, hats, bowties - to an event full of fabulous desserts and teas. Chef Patricia will be serving British Scones with Homemade Jam and Chantilly Cream, Lemon Vanilla Madeleines and a taste of Dark Chocolate Mousse…to name a few. Sample an assortment of finger sandwiches and tea, with an herbal variety to sip. This will be a memorable event to share for Mother’s Day, you won’t want to miss it!

Greek Classics
with Special Guest Chef Ryan Foti

Join Guest Chef Ryan Foti, Owner of Olympia Restaurant in Coeur d’Alene. Chef Ryan will be sharing some of his favorite Greek classics, starting with Phyllo Cups filled with many delicious delights! Next, he’ll prepare Phyllo Wrapped Feta, baked to perfection. The main dish of the night will be Spanakopita, a pie filled with cheesy spinach and herbs. For dessert, we’ll enjoy his decadent Baklava!

Dim Sum Night is Back

Join Chef Lesa for a fun night making and eating Dim Sum. The first dish will be the highly requested Shrimp Toast. Next up will be Shrimp Shumai, a steamed open dumpling with a szechuan sauce. The last dish will be Har Gow, a translucent dumpling filled with spiced pork and prawns, with a sweet and spicy dipping sauce. Rice will be served with each of these dishes.

Va Piano Vineyards Wine Tasting
with Winemaker and Owner

Taste a curated selection of these fine wines with Owner and Winemaker Justin Wylie. Getting a start in his own garage, Justin learned from local winemakers, growers and aficionados to find his palate; and he is coming to Coeur d’Alene to explore this unique experience with you. Fresh Summer Cooking

Summer’s coming and with the heat comes the time to eat lighter, fresher fare. In this hands-on class groups will work together to prepare the many elements to make Cuban Chicken, Black Bean and Rice Bowls with Mango Salsa. We’ll also learn to prepare Gazpacho Verde with Fried Almonds.

What Do Chefs Eat at Home?
with Chef Lesa

Join Chef Lesa for an evening of her favorite meals that she loves to make at home - a question asked frequently. First, she’ll make her go-to salad with Romaine, Herbs and Italian Cold Cuts, dressed with a Homemade Vinaigrette. Next dish you will help her make is Roasted Chicken Breast served over a bed of Roasted Organic Carrots and Butternut Squash with a creamy Feta Dressing. Last of the weekly faves is Salmon with Leek Sauce served with New Potato and Dill.

Chinese Takeout Part Two
with Chef Lesa

Join Chef Lesa for a night making some of your favorite Chinese food. Roll up your sleeves and help make the first dish - Orange Chicken - crispy fried chunks of chicken, tossed in a freshly juiced orange sauce. The next dish will be a Chicken Lo Mein, noodles with shredded chicken and vegetables in a silky sauce. Last dish will be a traditional Egg Roll with a Sweet and Sour Sauce. Steamed Rice will be served as well.

 

May 29th

Immersive Sushi Experience
with Chef Isaac

In this two-hour sushi deep dive, Chef Isaac will cover everything from the rice through restaurant-quality sushi. We will start off talking about the tools and tricks of the trade, then dive into the origins of sushi and roll our way to the modern day. Five courses, appetizers and dessert. This class will culminate with our specialty role - the Tuna Volcano.

 

May 30th

Buddha Bowls are Back
with Chef Lesa

Thursday, May 30th | Hands-On $85

Just in time for nice weather! You will help Chef Lesa create 3 different bowls that will become a staple in your home! The first bowl will be a Southwest Bowl featuring grilled chicken, black beans and many veggies, with a spicy dressing. Next bowl, you will make a Green Goddess Bowl…bright greens, peas, edamame, spinach and grilled fish, with the traditional goddess dressing! The last bowl you will assemble will be a Mediterranean Bowl. For this dish you will make homemade hummus with chopped veggies and a beautiful tahini dressing.

Our chefs purchase fresh ingredients in preparation for each class, they need an accurate headcount for quantity and for this reason we require 48-hour cancellation notice to receive a full refund or class credit.
