Meet Winemaker and Owner Ashley Trout from Brook & Bull as she shares her knowledge and passion for wine making. Five carefully selected wines will each be paired with their own course, specially prepared by our very own Chef Lesa.
first course
2022 Chardonnay, Conner Lee Vineyard
Tropical ceviche with prawn and ahi tuna cooked in lime juice and tossed in coconut milk, tropical fruit and herbs served with a crisp.
second course
2020 Cabernet Franc
Mediterranean flatbread with roasted vegetables, manchego cheese and a mint creme fraiche.
third course
2020 “Come Hell or High Water” Red Blend
Pan roasted pork tenderloin rubbed with cardamom and cumin, served with spiced apple and creamy new potato.
fourth course
2019 Walla Walla Cabernet Sauvignon
Seared King salmon on a bed of spiced cous cous and a rhubarb escabeche and herbs.
fifth course
2020 Malbec
Tenderloin of beef rubbed with white pepper and spices, topped with a grilled plum compote served on dressed peppery greens.
