Chinese Takeout: Memories of Bonsai Bistro with Chef Troy

In this class, Chef Troy will show us some of the classic Pan-Asian dishes from one of our gone, but not forgotten, downtown favorites - Bonsai Bistro. We will start with a hands-on Pork Potsticker course, accompanied by the famous secret sauce that was prepared at each table. Chef Troy will also show us how to create the velvety winter Asian elixir - Flowering Egg Drop Soup. Next, we will learn how to make a few staple Asian sauces that will have us whipping up Chinese dishes like a pro. Cooking Wild: Warm Winter Game with Chef Troy

The Cooking Wild adventure continues with Chef Troy! Tonight we will enjoy a tossed salad with Wild Greens and Winter Veggies, while Chef Troy demonstrates a Juniper/Cranberry vinaigrette. Here’s a little secret...this salad will be topped with roasted garlic grouse liver croutons for those who dare. We will then recreate the classic dish, Stuffed Mushrooms using antelope and bacon. Chef Troy will follow up by showing us how to make the old school mining favorite - Venison Pasties. Cooking Wild Holiday Game Bird with Chef Troy

Chef Troy’s Cooking Wild series continues for December! To start, we will enjoy a Winter Salad with a Cranberry Vinaigrette demonstration. For our Game Bird, Chef Troy will show us how to create a festive Sausage Filling using spices, nuts and berries. We will plate this with Roasted Winter Root Vegetables and an Herbed Merlot Pan Sauce. To finish the festivities, let's enjoy a Christmas Bourbon Creme Brûlée together.

Canadian Christmas with Chef Lesa

It’s back on the menu! Every year Chef Lesa is asked to make her favorite childhood delights from up north. Of course, Pierogies are on the menu! Potato and Cheese, as well as Onion and Sauerkraut; fried in onions and butter, then topped with sour cream. Her next dish will be Cabbage Rolls, like you’ve never had them before. For dessert, Chef Lesa will make her British Grandma’s English Shortbread!

Guest Chef Ted Genoway brings his years of culinary experience - from restaurants and country clubs around the area - to The Culinary Stone! This will be a night filled with incredible food. We’ll begin with a beautifully Stacked Salmon and Sweet Beet Avocado Tartare with a Lemon Vinaigrette. The main course will feature Chef Ted’s Braised Pork Belly and a Sweet Potato Mash finished with a Maple, Bacon Bourbon Glaze. For dessert, he’ll make a Grand Maurier Creme Brûlée.
