Chef Troy is taking us to France as he continues his Wild Game Series! We will start by creating the rich pastry - Beggars Purse - a puff pastry loaded with sautéed foie gras, wild mushrooms and melted brie. This will be finished with a Tarragon Cream. Then Chef Troy will show us how to make the classic dish, Bourguignon, using venison meat. We will enjoy this over Roasted Garlic Mashed Potatoes. To finish, he will demonstrate delicious Crepes filled with creamy mascarpone, strawberries, huckleberries and finished with a sea salted caramel.
