It is Zucca season… pumpkin, butternut, acorn, just to name a few. We will make 2 dishes with zucca. First, Swiss chard and acorn squash soup. Then butternut squash cappellacci with brown butter and nutmeg sauce. To finish we will make a Tuscan favorite: spiced poached pear with Vin Santo. Sabayon!
