A simple, yet elegant, dinner with a rich combination of flavors. Filet mignon de porc à la cannelle et pommes compotées à l’orange, a sweet and savory pork filet mignon cooked in a cinnamon and Madeira wine sauce served with an apple and orange compote. The pork, cinnamon, Madeira, apple and orange together create a beautiful and delicate harmony of flavors. For dessert we will prepare Mousse au chocolat noir et sa Madeleine au Miel, a dark chocolate mousse served with a honey madeleine: simple and very gourmand.
