Chickpeas and peas! We will learn how to make a velvety herbed chickpea puree. I will serve it on traditional Tuscan bread. We will then make spinach pasta and serve it in a pea and pecorino sauce. To finish we will make a Tuscan classic Crostata di Albicocche, apricot tart.
