Provence is a region in southeastern France bordering Italy and the Mediterranean Sea. For a starter we will make a warm zucchiniand goat cheese “terrine” with bell pepper and tomato coulis. Next, a specialty of the town of Sete on the Mediterranean coast, “Calamar farci a la Setoise”. Enjoy calamari stuffed with pork cooked in a delicious tomato garlic sauce. For dessert, “a Blanc Manger” a delicious almond cream flavored with orange blossom water and cinnamon.
