January 6th
East Coast Pizza
with Chef K

Roll up your sleeves for a night making pizza inspired by recipes from the East Coast, home of Chef K! We will build each recipe starting with a fabulous (cold) fermented dough for the iconic thin, airy and crispy crust that East Coast pies are known for. Chef K will use San Marzano Tomato Sauce for her first pizza with Pepperoni, Burrata and Hot Honey. Next will be a delicious Pear, Fig and Prosciutto pizza with Goat Cheese and a Balsamic drizzle. She will bring out the tomato sauce again for the highly underrated Hawaiian pizza, topped with lovely Canadian Bacon, fresh Pineapple and Smoked Bacon crumbles!

Vietnamese Pho

Join Chef Lesa for her highly requested class featuring Pho, a signature soup of Vietnam! Tonight she will make a silky and divine Pork Pho, topped with all the Herbs, Noodles and Crispy Pork Belly. Before we dive into the main course, we will enjoy some flavor-packed Pork and Shrimp Dumplings with Nuoc Cham Sauce. For dessert, Chef Lesa will prepare her delicious Bibingka, a gluten-free Coconut Pineapple Cake.

A Night to Remember the Wok Dishes of Bonsai Bistro

Chef Troy will demonstrate how to make some of the Asian favorites from one of downtown Coeur d’Alene’s top Pan-Asian restaurants that we love and miss. To start, we will recreate the Wok-Seared Chicken Lettuce Wrap. Then, Chef Troy will show us how to make the Vietnamese dish, Caramelized Garlic Noodles, that he learned from the chef of Crustacean in Las Vegas and Hollywood. Next, we will create the Bonsai classic, Salt & Pepper Prawns. The night will finish with a Coconut Cream Crème Brûlée. Reserve your seat for this culinary trip down memory lane and recreate some favorites in your own wok.

Chef Ted returns to The Culinary Stone kitchen with some incredible recipes to share with us! He will start class with a Southwest Salad, featuring veggies, tortilla strips and a citrus vinaigrette. But the name of the game this evening is Smoked Brisket Chili! Big bites of brisket with a heavenly mix of spices and beans, served with homemade cornbread. For dessert, Chef Ted will make his amazing Bread Pudding with an unforgettable Whiskey Sauce.

Our in-house pastry chef - Chef K - is known for her specialty cupcakes! You may have seen her rotating flavors in The Marketplace. She is offering us exclusive access to learn her tips and tricks to making such unique treats with the perfect balance of ingredients, quality and beauty. Chef K will first show us a fun cupcake for the winter season, Hot Chocolate topped with Marshmallow Buttercream and toasted Marshmallows. Next up, we’ll learn how to make a Peppermint Mocha with a Chocolate Ganache filling and divine Peppermint Frosting. The final delight of the night will be a Creme Brûlée cupcake with the unmistakable crispy torched top!

This is one of Chef Lesa’s favorites! To begin the evening, we will warm up with a piping hot bowl of Avgolemono, a chicken soup with orzo, fresh lemon and herbs. Our main course will be a Mediterranean Baked Cod with blistered tomato, fennel and lovely roasted veggies! For dessert, we will enjoy a Greek Custard Cake.

Join The Wine Maven on Friday, January 24th for a fun tasting of Washington wines! Make your way to The Culinary Stone any time between 4:30 and 6:00pm for two samples from each of these renowned wineries: Chateau Ste. Michelle, a pioneer of Washington wines with over 50 years of wine making; L'Ecole No.41 Winery, the third winery founded in Walla Walla Valley; and Browne Family Vineyards, a family owned-and-operated winery that captures the heart and essence of Washington Wines.
Tasting is $35 per guest and includes a light bite. Walk-ins are welcome, but we highly encourage guests to RSVP ahead of time.

Cooking Wild Series: Wild Boar

Chef Troy continues to lead his Cooking Wild series into the New Year for more exciting tastes from the great outdoors! Join him in this adventure for a night featuring Wild Board. Chef Troy will start with a Roasted Beet Salad, using goat cheese, pistachios, arugula and an Idaho huckleberry vinaigrette. Next, we will create the classic American dish, "Stuffed Bell Peppers," using wild boar and poblano peppers with local wild rice from St. Maries, served with a sweet and tangy chipotle marinara. We will finish the night with a Sea Salted Chocolate "Pot de Creme" dessert.

Handmade Pasta
with Chef Lesa

Don’t be intimidated by handmade pasta! Chef Lesa has so much fun with this class, providing instructions that are easy to follow and repeat at home in our own kitchens. But make sure you are ready for a good arm workout - we will be working in groups at pasta stations designated around the classroom area. Before we get to work, we will enjoy a lovely Italian Salad. The first pasta we will make is a Pappardelle with a lovely short rib bolognese. Next, Gnocchi with a cream sauce using Point Reyes Blue Cheese from The Marketplace. The night will come to a close with a lovely Lemon Tiramisu for dessert.

Paint & Sip

Our first Paint & Sip night was a great success! In case you missed it, we are hosting another one with local, talented artist Chelsea Wheeler. Known at The Culinary Stone for her work on our ever-popular chalk wall, Chelsea will lead us in a guided tutorial for painting a North Idaho mountain scene. Let your imagination run wild with the colors and details that speak to you, she’ll even show you how to add a touch of Valentine flare for that special someone in your life. This unique event will include two glasses of wine, as well as savory charcuterie cups and a gourmet dessert prepared by our in-house pastry chef.
