Class - Noël en France with Chef Patricia

We will celebrate "Noël" early, cooking a French Christmas menu using some of the traditional Christmas ingredients including salmon, scallops, oranges and of course chocolate!For starters, Rillettes aux deux saumons parfumées au thym citron et à la coriandre (a salmon spread made with fresh and smoked salmon flavored with lemon, thyme and cilantro) and Saint-Jacques poêlées à la crème de safran (pan seared scallops in a saffron cream). For the main course a Christmas favorite with a pork filet mignon à l'orange with an orange and Porto sauce accompanied by a celery and apple purée. Flavorful and delicious. And for that sweet tooth…. chocolate truffles. Yum!
