Inspired by the bicycle race Paris Brest Paris, the Paris Brest cake was created in 1910 by the pastry chef Louis Durand. Since then, this delicious nutty dessert can be found in every great pastry shop in France. Come and learn to make one. From hazelnut paste, the praline, the “mousseline” cream, the “montage” (put together the cake) and of course the “degustation” of the cake. It will be a lovely way to spend a fall Saturday afternoon!
