It’s hunting season and Chef Troy is ready for it! To start, we’ll gather around a spicy Arugula Salad with cherry tomatoes, shaved manchego cheese, roasted pine nuts and a citrus vinaigrette. Chef Troy will show us how to work with cuts of wild game, creating pan-seared Venison Medallions with a merlot demi-glace paired with a Scalloped Potato Galette, Caramelized Forest Mushroom and Onion Sauté.
